More Than Meets the Eye

 

Carrots get their reputation as the “eyesight” veggie from their high amounts of beta carotene, a carotenoid the body converts to vitamin A. There are three active forms of vitamin A: retinol, retinal, and retinoic.  Each plays an important role in every cell’s growth, immunity, and reproduction.  This includes skin cells! 

Skin is the largest organ in the human body and most of your Vitamin A supply is used to protect that precious outer layer.  This essential antioxidant fortifies each cell to protect itself against free radicals and allows cells to constantly be replaced with healthy ones.  Naturally occurring retinoic acid helps to prevent acne without irritating the skin.  You know that healthy glow everyone wants? Well, look no further than plant derived vitamin A.

So, where do we find this essential vitamin?  Look for the bright colors! Diets consisting of sweet potatoes, carrots, dark leafy greens, squash, and peppers are full of vitamin A.
